One of my favorite things about baking is that every cookie has its own personality, and these dark chocolate caramel cookies with sea salt certainly have theirs. Some cookies are perfect with a cold glass of milk. Others remind me of Christmas, family gatherings, or childhood memories. Some are the cookies my grandchildren get excited to see on the counter, while others have simply become family traditions over the years.
And then there are a handful of recipes that I simply have a hard time walking past without grabbing “just one more.”
This is one of those cookies.
I’ve always loved the combination of rich chocolate, buttery caramel, and a little sprinkle of flaky sea salt. Somehow those three flavors together create something that’s rich without being overwhelming, and every time I make these cookies, I find myself sneaking one before they’ve even had a chance to cool.

I started baking when I was a little girl, and over the years I’ve probably made thousands upon thousands of cookies. Every recipe has its own story, and every one has become a favorite for a different reason.
Like many of my bakery-style cookie recipes, these Dark Chocolate Caramel Cookies with Sea Salt didn’t happen overnight. I love experimenting with ingredients until everything comes together just the way I imagine it. After lots of batches (and plenty of willing taste testers), this recipe finally became exactly what I had hoped for.
When I was selling my cookies, this was one of my most popular flavors, this was one of my most popular recipes. Even today it’s still one that family and friends request often, which always makes me smile.
The Secret Is the Caramel

If I could give you one piece of advice before making these dark chocolate caramel cookies with sea salt, it would be this…
Don’t use a caramel that’s too soft.
This is probably the biggest mistake people make when trying to make stuffed caramel cookies.
The caramel should be firm enough to hold its shape. It shouldn’t be runny, gooey, or overly pliable before you wrap it inside the dough.
Why?
Because as these dark chocolate caramel cookies bake, the caramel melts.
If it starts out too soft, it can spread underneath the cookie instead of staying tucked inside where it belongs. The result is a sticky puddle of caramel that makes the cookies harder to remove from the baking sheet and much chewier than intended.
The perfect caramel stays right in the center of the cookie, creating that soft, gooey bite without becoming a mess.
If you’re lucky enough to have homemade caramels, this is absolutely the recipe I’d use them in. Homemade caramels add such an incredible flavor and texture.
Store bought caramel squares work beautifully too. Just be sure they’re firm enough before baking.
Why I Can’t Resist These Dark Chocolate Caramel Cookies
I honestly couldn’t tell you which of my cookie recipes is my favorite because they each satisfy a different craving.

The rich chocolate cookie, the soft caramel center, the dark chocolate, and that tiny sprinkle of flaky sea salt all work together so perfectly. Every bite of these dark chocolate caramel cookies with sea salt has a balance of flavors that keeps me coming back for another.

Dark Chocolate Caramel Cookies with Sea Salt

Ingredients
- 3 cups packed brown sugar
- ¾ cup granulated sugar
- 1 cup butter, melted
- 1 cup margarine, melted
- 5 large eggs
- 2 tablespoons vanilla extract
- 4 teaspoons baking soda
- 2 teaspoons salt
- 1 cup unsweetened cocoa powder
- 6 to 7 cups all purpose flour, leveled (add more if needed)
- Milk, as needed (1–3 tablespoons), if dough is dry
- 3 cups dark chocolate chips
- 24 to 28 caramel squares (homemade if possible)
- Caramel sauce for drizzling
- Flaked sea salt
Directions to Make Dark Chocolate Caramel Cookies with Sea Salt
- Preheat your oven to 325°F to 350°F, depending on your altitude and your oven.
- In a large mixing bowl, cream together the melted butter, melted margarine, brown sugar, and granulated sugar until smooth.
- Beat in the eggs and vanilla extract until fully incorporated.
- Add the baking soda, salt, cocoa powder, and flour. Mix until a soft dough forms.
- If the dough feels dry, add milk one tablespoon at a time until the dough is soft and no longer sticky to the touch.
- Fold in the dark chocolate chips.
- Using a large 4 tablespoon cookie scoop, scoop two portions of dough together to create a cookie weighing about 5 ounces.
- Gently flatten the dough and place one caramel square in the center.
- Wrap the dough completely around the caramel, making sure all seams are sealed so the caramel stays inside while baking.
- Place the cookies on a parchment-lined baking sheet and press a few additional dark chocolate chips onto the tops before baking.
- Bake for 16 to 18 minutes.
- As soon as the cookies come out of the oven, gently press a few more chocolate chips into the tops while they’re still warm.
- Sprinkle lightly with flaky sea salt.
- Allow the cookies to cool completely before drizzling with caramel sauce.
Yield
- Approximately 3 dozen large bakery-style dark chocolate caramel cookies with sea salt
- Or 6 dozen regular-sized cookies
My Favorite Tips
Homemade Caramels Make a Difference
If you have a favorite homemade caramel recipe, this is the perfect place to use it.
Just make sure the finished caramel has a nice firm chew before placing it inside the dough. If it’s too soft before baking, it’ll be even softer afterward and might leak out of the cookie.
Don’t Skip the Flaky Sea Salt
The sea salt isn’t just for looks.
It balances the sweetness of the chocolate and caramel and gives these cookies that irresistible sweet and salty combination.
Add Extra Chocolate Chips After Baking
One of my favorite bakery tricks is pressing a few extra chocolate chips into these dark chocolate caramel cookies with sea salt immediately after they come out of the oven.
They soften just enough to stick while still keeping their shape, making the cookies look even more bakery worthy.
Let the Dark Chocolate Caramel Cookies Cool Before Drizzling
I know it’s tempting to drizzle the caramel while the cookies are still warm.
Trust me…
Waiting is worth it.
The caramel stays prettier, the drizzle holds its shape, and the finished cookies look just as good as they taste.
