One of my favorite go-to dinners actually started with a surprise. Believe it or not, I had never eaten a crepe until I married my husband 23 years ago. Then he introduced me to one of our favorite Disneyland treats, the famous Monte Cristo Sandwich. And that’s the origin of our Monte Cristo Crepes.
We loved the sandwiches so much that we started experimenting at home, and eventually discovered that making them with homemade crepes was even easier than we imagined!
Now, this has become one of my favorite busy-night meals because I can make a big batch of crepes ahead of time and keep them in the refrigerator. When dinner rolls around, all I have to do is add a few slices of ham, sometimes turkey, and Swiss cheese. Then I roll them up, warm them in the microwave, and top them with my favorite jam (usually seedless blackberry).
The Monte Cristo Crepes dinner is on the table in just minutes!
And the best part? The leftover crepes become dessert!
We fill them with all kinds of delicious things, including:
- Nutella
- Strawberries, raspberries, or blackberries
- Bananas
- Cookie butter
- Coconut
- Chopped nuts
- Apple pie filling
- Caramel sauce
- Chocolate sauce
- Whipped cream
I absolutely love recipes that can do double duty. One batch gives us a quick dinner and an easy dessert that everyone gets excited about.

𝗙𝗥𝗘𝗡𝗖𝗛 𝗖𝗥𝗘𝗣𝗘𝗦
Ingredients
- 1 cup cold water
- 1 cup cold milk
- 4 eggs
- ½ teaspoon salt
- 2 cups all-purpose flour
- ¼ cup vegetable oil
Directions
- Add the water, milk, eggs, and salt to a blender.
- Add the flour and blend until combined. Pour in the vegetable oil.
- Cover and blend on high speed for 1 minute.
- You may refrigerate the batter for at least 2 hours before cooking. I usually skip this step, but it is helpful when making the batter ahead of time.
- The batter should have the consistency of thin cream. If it seems too thick, blend in a spoonful of water.
- Heat a frying pan over medium to medium-high heat. Pour in a small amount of batter and quickly tilt the pan to create a thin, even layer.
- Cook until the surface is no longer wet. Flip the crepe and cook the other side for just a few seconds.
- Serve warm, or stack and cover the crepes until you are ready to use them.

Monte Cristo Crepes Ingredients
- Prepared crepes
- Thinly sliced ham
- Thinly sliced turkey, optional
- Thinly sliced Swiss cheese
- Seedless blackberry jam
Monte Cristo Crepes Directions
- Place a couple of slices of meat in the center of each crepe. I usually use only ham, but you can add turkey too.
- Cut a slice of Swiss cheese in half and place it on top of the meat.
- Roll up the crepe and place it on a microwave-safe plate.
- Microwave for about 1 minute, or until the cheese is melted and the filling is warm.
- Top with jam and enjoy!
